Designed for a concept that was very busy at peak times this recipe has minimal steps and is easy to produce. Four moves to the plate – Beans (which are also the sauce), vegetable (Rapini & mushroom that were already in use on the menu), Pork Chop, and colorful garnish. Chops can be seasoned before searing ahead of service and finished in the Woodstone oven. If business dictates pork chops could be pre seared to speed up production. We specified the Woodstone oven for cooking for this concept because of how visible it was to guests, and there was excess cooking capacity. It was also great for guests to see something other than flat breads coming out of the highly visible show oven. This menu item has a higher than average contribution to the bottom line.
