This item is a result of a picture inspiring a very successful menu development outcome. The original idea came from a magazine picture of crispy U shaped potato chips with crème fraiche and golden trout caviar. After many incarnations and restaurant testing the Ahi Tuna Taco came to be. Specialty kitchen equipment was designed and custom service ware developed specifically for this dish. This wildly successful item continues to be a signature on the menu developed for a premium casual restaurant chain years after its launch.
